Walla Walla Cabernet Sauvignon

Big skies stretch over the wheat fields of Walla Walla, but it's the long, hot summer days and cool nights that define its wines.

This region's Cabernet Sauvignon strikes a rare balance: luscious, intense fruit from those sun-soaked days, with freshness and fine structure from the evenings.

VINEYARD

Anna Marie Vineyard

Nineteen hectares, planted in 2001 in wide-spaced rows, with Cabernet Sauvignon at the core alongside Merlot, Malbec, Petit Verdot and Syrah. The oldest Cabernet blocks, now well past twenty years, yield the estate's finest Bordeaux fruit: a rare balance of sun-soaked richness from those long days and the freshness and fine-grained tannin of the cool mountain nights.

SUB-REGION

Walla Walla Valley AVA sits in the rich agricultural southeastern corner of Washington State, spilling over the border into Oregon. Lush green vineyard rows sit next to low rolling hills splashed with wheat fields. Everyone comments on how big the sky is here. Hot, dry summers are met with cool nights. This diurnal swing, and the growing season’s long daylight hours allow Cabernet Sauvignon to retain freshness while still reaching full ripeness. The Walla Walla Valley AVA is one of the most respected Cabernet Sauvignon regions in the Pacific Northwest, hitting a rare balance between intensity of fruit with natural structure and lift.

Soil

Silt loam

Varied soils within the Walla Walla Valley AVA mean that Cabernet Sauvignon shifts from polished and elegant to dense and powerful. Windblown loess (silt) is well-drained, producing concentrated fruit and fine tannins. Basalt and gravel deposits from ancient volcanic activity and river systems add structure to the wine. Whereas Missoula Flood sediments can produce richer, more generous Cabernet Sauvignons.

Elevation

400–2000 feet

Vineyards sit between 400–2000 feet above sea level. Lower elevations tend to produce riper wines with plush fruit profiles whereas higher sites bring more tension, firmer tannins, and brighter acidity. As it is with the best Walla Walla Valley AVA Cabernet Sauvignons, our 2024 Søren release is a blend of elevations.

Winemaking

Harvested block by block as each lot reaches full ripeness. Destemmed and fermented in separate small lots at moderate temperatures, with daily pump-overs and extended maceration for depth and fine tannin. Pressed to French oak barriques for barrel aging, with lots kept apart until final blending. Racked, blended and bottled once fruit, structure and freshness sit in balance.
